My pork rub is full of flavor-enhancing goodness without overpowering the natural succulence of the meat.
This pork rub is delicious on every cut of pork we have tried it on. We especially love it on the tenderloin I use to make red beans and rice! James says it would even make warthog edible, hence the title.

It is pretty simple to make. And is made with ingredients you probably have sitting in your spice rack.
- 6 tbsp ground cumin
- 4 tbsp chili powder
- 2 tbsp salt
- 2 tbsp ground coriander
- 2 tbsp garlic powder
- 1 tbsp paprika
- 1 1/2 tsp ground allspice
- 1 1/2 tsp pepper
- Pour all the spices in a clean jar.
- Shake well to mix.
- Shake before each use.
Makes about 4.5 four tablespoon servings.
Generously rub the seasoning mix on the pork. I use about 4 tablespoons for one pound of meat. I like to rub the seasoning mix on the pork and let it marinate overnight before cooking.
