Baked Apples A La Mode

Yay!  Fall is here or as much as “fall-like” as it gets here in Sunny Florida!  Although apples are available year round I look forward to them more in the fall.  It’s probably because I feel like it is perfectly reasonable to cook them now that it is fall instead of summer.

One of my favorite apple treats is baked apples.  Yum!

I love them covered in cinnamon.  They make the perfect after dinner treat, too.

Plus, they are fun for the kids to help make.  Cakey really enjoys sprinkling the cinnamon and sweeteners.  Personally, I don’t think there is a thing as too much cinnamon on apples so I just let her pour it on!

Ingredients:

  • 4 apples
  • 2 TBSP ground cinnamon
  • 1-2 TBSP stevia or 6-8 TBSP sugar

Optional Toppings:

  • Vanilla ice cream
  • Hot caramel sauce
  • Redi whip or homemade whipped cream

Directions:

  1. Preheat oven to 375 degrees.
  2. Core and thinly slice apples.  You could chop the apples if you wished.
  3. Sprinkle apples with sweetener and cinnamon.
  4. Bake for 40 minutes.
  5. Top as desired and serve hot.

Baked Apples A La Mode - a delicious fall treat lightly sweetened and covered in cinnamon.  For the extra special treat have them a la mode with hot melted caramel sauce and whipped cream!

When I make regular Baked Apples, I make some with sugar for the girls and some with stevia for James and I.  I adjust the amount of sweetener used based on the type of apple used.  I find red delicious apples not as sweet as gala or fuji.  So depending on what kind of apple I use will depend on how much sweetener I use.

Okay, so I know I have optional toppings listed up there and all you THM’s are going “Those are not all on plan”.  I love these apples by themselves and they are considered an E for you THM’s.  But if you are looking to indulge a la mode with melted caramel sauce and Redi Whip is the way to go!  Especially if the apples are still hot cause the ice cream starts melting and it’s just plain delicious!  If you would rather keep them in line with THM then have them as is or with a little Redi Whip.

The girls really loved baked apples a la mode.  It was a special little treat for them.
