Salads are one of my favorite side dishes or main meals if topped with meat. Blackberry and Spinach Salad is very simple. Like, so simple I almost feel like it’s not a recipe.
But it is! And it is so good.
The first time I made this, I didn’t know how it would go over with everyone. James did not like it but the rest of us did. Well, actually, the girls just ate James’ blackberries and he ate the spinach. At least Nana, Brooke, and I liked it.
We have had it almost every week this summer.
Yesterday I shared my new favorite salad dressing, Tangy Dijon Mustard Vinaigrette. I love this dressing on top of salads but it is really good on blackberry and spinach salad.
Blackberry and Spinach Salad
- 10 ounces fresh spinach
- 2 cups blackberries
- salt and pepper to taste
- Tangy Dijon Mustard Vinaigrette or balsamic vinaigrette
- Roughly chop or tear the spinach leaves.
- Toss blackberries with spinach.
- Sprinkle liberally with salt and pepper.
- Top with Tangy Dijon Mustard Vinaigrette or balsamic vinaigrette
Blackberry and Spinach Salad is perfect with any grilled meat. In fact, every time I make it, I just slice up whatever meat we are having and top the salad with it. Grilled steak, chicken, even pork chops are delicious on top of blackberry and spinach salad.
