We like things hot and spicy in our household, which is why we love us some Cajun cooking! Jambalaya, dirty rice, the list goes on and on. We used to use Zatarain’s seasoning and even boxed mixes, but they contain MSG and other preservatives which give me a horrible headache!
To prevent the headaches, we cut out the Cajun food and just had them on special occasions. However, now that we are gluten free, Cajun rice dishes are dishes we all agree on so I had to bring them back into our rotation. After a little trial and error I came up with an awesome spicy Cajun seasoning mix.
- 5 TBSP smoked paprika
- 3 TBSP seasoning salt
- 2 TBSP onion powder
- 2 TBSP garlic powder
- 2 TBSP dried oregano
- 2 TBSP dried basil
- 2 TBSP ground black pepper
- 1 TBSP dried thyme
- 1 TBSP cayenne pepper
- 1/2 TBSP crushed red pepper flakes
Does anyone else remember making those layer colored sand projects in baby food jars way back in vacation Bible school? Every time I make a new batch of homemade seasonings that is what I remember when I look at the jar!
- Place all ingredients in a glass jar.
- Screw the lid of the jar on tight and shake to combine.
- Store in a cool, dry place.
- Shake before each use.
This Cajun seasoning is spicy, so be careful. The first time I used it I only used half of what my recipe called for and then increased as needed. I could tell it was spicy just by the whiff I got when I opened the jar. The few tablespoons I put in my jambalaya caused us to have the sniffles but at least our sinuses were clear!
You can use this seasoning to spice up all kinds of dishes. We love it in our jambalaya but it is delicious in scrambled eggs, brown rice, or as a dry rub on meat.
