The first time I made my Easy Almond Butter Cookies I was actually planning on making my mom’s easy peasy peanut butter cookies but we had very little peanut butter. We did have a whole jar of almond butter! Almond butter and peanut butter are pretty interchangeable in other things. Why not cookies?

The almond butter worked beautifully. Now every time I make almond butter cookies, no wait every time I make cookies period, I am reminded of sweet, little 18 month old Cakey thinking Daddy got paid in cookies. In fact, sometimes I still think she thinks Daddy gets paid in cookies. For those of you who haven’t heard the story before here it is.

Cakey, 18 months old at the time, was complaining about Daddy being at work. I explained to her that Daddy went to work to make money to pay for the things we need and want. She looked confused. I tried a different tactic. I asked her if she liked cookies. She readily agreed. I told her Daddy had to go to work to make money so that I could buy cookies.

Cakey shortened this down to “Daddy go to work to get cookies.” For a few days after Cakey would tell us “Me go to work. Daddy stay home.” She thought Daddy was getting cookies while he was at work! 🙂

Easy Almond Butter Cookies

Ingredients:
  • 1 cup almond butter
  • 1 cup sugar
  • 1 egg

Easy Almond Butter Cookies - I love that these almond butter cookies are gluten free, dairy free, and only contain 3 ingredients! Almond butter cookies are very chewy while still being crispy on the edges.

Directions:
  1. Preheat oven to 350 degrees.
  2. In a medium bowl, beat almond butter, sugar, and egg.
  3. Scoop out using a 1 inch cookie scoop onto a cookie sheet or baking stone.
  4. Bake for 10-12 minutes or until done.
  5. Allow to cool for 2 minutes on baking stone.
  6. Then remove to cool completely on wire rack.

The flavor of Almond butter is very different from peanut butter but that did not stop anyone from scarfing down the cookies!
