About a week ago I made Cheesy Beef Enchiladas. The only problem with enchiladas is that the recipe easily makes 8 servings. This is a big problem for James and I because we are both actively trying to lose weight. While my recipe is a bit healthier it is still rich and a high calorie food.
I thought about preparing the enchiladas in two dishes and freezing one but I was worried that they would be soggy. So I decided to make a freezer friendly enchilada kit. The enchilada kit was very simple to make and will keep for 2-3 months in the freezer.
Freezer Friendly Enchilada Kit
To make my enchilada kit I wrapped 4 enchiladas in aluminum foil and placed them in a gallon sized freezer safe bag. I, then, poured half the enchilada sauce into a freezer safe quart size bag and squeezed all the air out of it. Next, I put half the remaining cheese into a quart sized freezer safe bag and squeezed all the air out of it. I clearly labeled all the bags. Finally, I placed the sauce and cheese on top of the enchiladas in the gallon size freezer bag and squeezed all the air out of it. Then I tossed that bad boy into the freezer and bam! enchilada kit done! 🙂
