At the farmer’s market a couple of weekends ago, Doodles asked if we could get peaches and make Gluten Free Fresh Peach Cobbler. Of course, I said only if you help. 🙂

With it’s flaky crust and sweet filling with notes of cinnamon and a hint of nutmeg this gluten free fresh peach cobbler sure to be a hit! While this gluten free fresh peach cobbler may look complicated it’s not! This is one of the easiest peach cobbler recipes!

Now I know with 17 steps this may look complicated but it’s not! This is one of the easiest peach cobbler recipes!

Gluten Free Fresh Peach Cobbler
With it's flaky crust and sweet filling with notes of cinnamon and a hint of nutmeg this gluten free fresh peach cobbler sure to be a hit! While this gluten free fresh peach cobbler may look complicated it's not! This is one of the easiest peach cobbler recipes!
Ingredients:
Filling
  • 8 large peaches
  • 1/3 cup brown sugar
  • 1/3 cup white sugar
  • 1 teaspoon lemon juice
  • 2 teaspoon gluten free corn starch
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
Crust
  • 1 1/2 cup gluten free pancake mix* (see notes below)
  • 1/3 cup brown sugar
  • 1/3 cup white sugar
  • 1/2 cup cold butter, cut into cubes
  • 1/2 cup water, microwaved until very hot
Topping
  • 1/4 cup white sugar
  • 2 teaspoons cinnamon
Directions:
  1. Preheat oven to 425 degrees.
  2. Peel peaches, if desired.
  3. Slice peaches in halve and remove pits.
  4. Slice each peach halve into 1/4-1/2 inch slices.
  5. Place peach slices into a 9 x 13 baking dish.
  6. On top of the peaches, add the remaining filling ingredients and mix well.
  7. Bake in oven for 10 minutes. Remove from oven.
  8. In a medium bowl, mix together pancake mix and sugars.
  9. Use a pastry blender to cut cold butter cubes into pancake mix until crumbly.
  10. Pour 1/2 cup of the hot water into mix.
  11. Stir to combine. Batter will be very gooey.
  12. Spoon over peaches and spread to even and distribute it out a bit.
  13. Mix topping together and sprinkle a bit over it.
  14. Bake for 30 minutes or until the crust is golden brown.
  15. Remove from oven and allow to cool slightly.
  16. Sprinkle with remaining topping.
  17. Serve with a scoop of vanilla ice cream or whipped cream, if desired.

NOTES:
  • I use Better Batter’s gluten free pancake & biscuit mix to make this peach cobbler and it already contains xanthan gum. If your gluten free pancake mix does not, and most don’t, you’ll need to add 1 tsp of xanthan gum to the crust ingredients.

The kiddos love their peach cobbler topped with vanilla ice cream or homemade whipped cream but I think it is just awesome by itself.
