Man, I love yellow rice made with saffron yellow rice seasoning! Saffron Yellow Rice Seasoning is a delicious, flavorful, homemade verison of Vigo seasoning mix to make yellow rice without added MSG.
Did you know saffron is the most expensive spice in the world? The prices of it range from $500 to $5,000 per pound in the US. That is crazy! When I bought my tiny bottle at Target a couple of months ago it cost me over $16.00 for half a gram! That is approximately 0.02 ounces. Crazy. Just crazy. The reason saffron is so expensive is because it is hand harvested.
Anyway enough on the economy lesson on saffron.
Saffron Yellow Rice Seasoning AKA Homemade Vigo Seasoning
One of my favorite dishes growing up was chicken and yellow rice that either my mom, aunt, or grandma made. I have only made it a few times since James and I got married. But a couple of months ago I had a hankering for it. The problem is I’ve always used either the Vigo seasoning mix or the Vigo rice mix. Unfortunately, those both contain MSG which gives me horrible migraines hence the lack of me making it.
I decided to try and find a recipe for the Saffron Yellow Rice seasoning that I could make at home that would not give me migraines. Luckily, I was able to duplicate the seasoning!
I am happy to report no migraines!! 🙂
- 3 teaspoons onion powder
- 3 teaspoons garlic powder
- 1 teaspoon turmeric
- 1/2 teaspoon cumin
- 1 teaspoon salt
- 1/2 teaspoon sugar
- 1/2 teaspoon pepper

- Dump the saffron powder into a empty, clean glass jar.

*Update 5/2/16: A few weeks ago, I ran out of my homemade saffron yellow rice seasoning and had to make a new batch. I figured since I was making it I might as well reshoot the photographs too. Below you can see my original photo for this recipe.*
