I don’t know what has been going on with me lately but I have been craving for foods of my childhood. Most of those foods were not healthy. And frankly some of them (like this one) were a bit strange.
My Memaw…you remember her, right? She taught me how to make those awesome baked potatoes…but anyway, back to this story. My Memaw used to buy a package of cajun imitation crab dip from the seafood area of Winn Dixie. We would devour it on crackers. It was so good!
Anyway, my mom and I were talking about it and of course James had to look up for us just what in the world imitation crab meat really was. It is real fish just in case you were wondering. Just not remotely something you would want to eat.
But alas, it is what I wanted. Instead of buying a pack in the deli (which had gluten in it! Crazy, I know) I decided to make it.
- 2 7 oz packages of crab meat (real or imitation)
- 1 8 oz container of onion and chive cream cheese
- 2 TBSP Cajun Seasoning
- Shred crab meat with two forks
- Mix remaining ingredients in a bowl.
- Chill in refrigerator until ready to eat.
Spoon a small amount on to crackers, pita chips, tortilla chips, etc.
This dip would also be good with shrimp or other seafood. Or maybe even a mixture like a seafood salad.
Honestly, I have not had this since long before Memaw died in 2002. I guess it really isn’t that bad for you if you only have it once every decade or so, right?
