Valentine’s Day is this fast approaching. One of my girls’ favorite treats are crispy rice treats, we of course make our crispy rice treats gluten free by using Erewhon Crispy Brown Rice Cereal. They love the sticky, sweet marshmallow treats. While the original are fun to make and to enjoy, I like to make our crispy rice treats a little more festive. Our 4 favorite crispy rice treats for Valentine’s Day are festive and fun while still being easy to make.
Basic Crispy Rice Treat Recipe
Ingredients:
- 5 TBSP butter
- 1 10 oz bag mini marshmallows
- 6 cups of Erewhon Crispy Brown Rice Cereal (or any other gluten free rice cereal)
- Ghirardelli Chocolate Melting Wafers
- Valentine’s Day Sprinkles
- Valentine’s Day Shaped Metal Cookie Cutters
Directions:
- Butter two 9 x 13 cookie sheets.
- In a large pot, melt butter over low heat.
- Add marshmallows and stir continuously until completely melted.
- Add cereal and stir until completely coated.
- Pour cereal into prepared pan.
- Use a piece of parchment paper (or a buttered spatula) to smoosh (yes, that’s a technical term, trust me I’m a mom) the treats evenly on the sheets.
- Allow to cool completely before cutting.
Valentine’s Day Shaped Crispy Rice Treats
Heart shaped crispy rice treats are fun to make!
- To make heart shaped crispy rice treats, use metal Valentine’s Day cookie cutters to cut out your hearts after the treats have cooled completely.
Valentine’s Day Chocolate Dipped Crispy Rice Treats
While you can dip regular old square crispy rice treats in chocolate, it is much more fun to dip some of the hearts you cut out from above.
- To make chocolate dipped crispy rice treats, cut out Valentine’s Day shapes using metal cookie cutters.
- In a glass bowl, melt some chocolate wafers (we used Ghirardelli Chocolate Melting Wafers) stirring every 30 seconds.
- Once the chocolate wafers are melted, dip the treats.
- Set the treats down to dry on wax paper and sprinkle with Valentine’s Day sprinkles.
Valentine’s Day Confetti Crispy Rice Treats
Confession time! These are actually my favorites! I love the pretty colored sprinkles in them.
- To make Valentine’s Confetti Crispy Rice Treats, follow the basic crispy rice directions from the recipe above except add 1/4 cup of Valentine’s Day sprinkles to the cereal before adding the melted marshmallows.
- Then stir completely and pour the prepared cereal onto the cookie sheets.
- Sprinkle with additional sprinkles over the cereal before they cool.
- After the treats have cooled completely, cut out Valentine’s Day shapes using metal cookie cutters.
Valentine’s Day Shaped Strawberry Crispy Rice Treats
Strawberry crispy rice treats are my girls favorite! They love the strawberry flavor and of course the pretty pink color, which is perfect for Valentine’s Day.
- To make Valentine’s Day Shaped Strawberry Crispy Rice Treats, prepare two standard 9 x 13 inch cookies sheets.
- Then follow the recipe found here expect pour the prepared cereal onto the cookie sheets.
- After the treats have cooled completely, cut out Valentine’s Day shapes using metal cookie cutters.
Tip:
Did you know crispy rice treats are freezer friendly? Yup, they are. I usually freeze about half the cut up batch when we make them. To freeze them, store the cut up squares or shapes in a freezer-safe ziptop bag. Then when the girls ask for them later, I just pull the bag out of the freezer and let the crispy rice treats come to room temperature.
My girls love helping cut out the different heart shapes when making we make these. But they love using cookie cutters. I recommend using metal cookie cutters because it makes cutting out the shapes a lot easier. We tried using plastic cookie cutters but the girls ended up smooshing 🙂 the crispy rice treats or breaking them while trying to force the cookie cutter through. When we switched to metal, things were a lot smoother sailing.
In my opinion, making crispy rice treats are so much easier than making sugar cookies. Less mess, less clean up but all the fun of getting to use cookie cutters and…. SPRINKLES! LOL! That might be my girls favorite part!
