Easy Black Bean Soup is one of my favorite recipes. It is super easy to whip up and makes a hearty lunch or dinner. I love that it is made with three ingredients that are shelf stable so they are easy to keep on hand. One can of black beans, one can of Rotel, and water how simple is that? I always keep a can of black beans and a can of Rotel on hand so I can whip it up whenever I like.
The kids also like this soup. When the girls were babies they ate it with no problems. Now that they are older and pickier they don’t like the tomatoes and green chilies from the Rotel in their soup. I usually pick out the tomatoes and green chilies for them or let them do it themselves.
Easy Black Bean Soup

Ingredients:
- 1 15 oz can of black beans
- 1 can of Rotel
- Water
Optional topping ingredients:
- Cheese
- Greek yogurt (plain) or sour cream
- Tortilla chips
- Crackers
- Cheese Quesadillas
Directions:
- Open black beans and empty into a colander.
- Rinse the black beans and the can well with running water.
- Dump the black beans and Rotel into a pot.
- Add water one black bean can full at a time until completely covered.
- Bring to a boil then reduce temperature and simmer for about 20 minutes.

I serve this soup as is and set out the Greek yogurt or sour cream and cheese so everyone can make it to their liking. Personally I love mine with a dollop of Greek yogurt and a pinch or two of cheese. I normally serve the soup with crackers or tortilla chips on the side. However, this time I served it with a cheese quesadilla on the side and it was awesome!
I prefer this soup at a one to one ratio (one can of black beans to one can of Rotel) but a two to one ratio is still pretty tasty (two cans of black beans to one can of Rotel).
