Mixed Berry Greek Yogurt Parfaits

The kids and I are big yogurt eaters and our favorite ways to eat yogurt is in parfaits. Parfaits are pretty simple to make it’s just layers of yogurt, fruit, and granola. These mixed berry Greek yogurt parfaits are their favorite. It’s perfect for breakfast, lunch, or snack time.

I love that when they eat a parfait they are not only getting an excellent source of fiber, vitamins, and minerals but they are also getting a nice big dose of protein and healthy probiotics.

Mixed Berry Greek Yogurt Parfaits

Like all kids, they go through eating times when they refuse to eat various foods. Much to James’ disappointment, what they refuse to eat it is usually the meat or the protein source of that meal. When I notice that they have not eaten much protein in the last few meals I will make them a protein packed smoothie or parfait.

During the summer I use fresh blueberries, raspberries, and strawberries but in the winter or whenever I can’t find the fresh fruit I use frozen. I also use frozen berries when I meal prep these mixed berry yogurt parfaits for lunches later in the week.

Ingredients:
  • 1 cup mixed berries (blueberries, blackberries raspberries, strawberries)
  • 1/2 cup granola
  • 1 scoop vanilla protein powder
  • 1 cup plain Greek yogurt (or flavored Greek yogurt)
Directions:
  1. In a bowl add Greek yogurt and protein powder.
  2. Stir until smooth. If lumpy add a bit more Greek yogurt.
  3. In a small bowl add 1 tablespoon of granola.
  4. Top granola with 1/4 cup of Greek yogurt mixture.
  5. Then add 1/4 cup of mixed berries.
  6. Next add 2 tablespoons of granola on top of the berries.
  7. Then add 1/4 cup of Greek yogurt mixture to the top of the granola.
  8. Add 1/4 cup of mixed berries to the top of the Greek yogurt mixture.
  9. Finally add 1 tablespoon of granola on top of the mixed berries.
Makes about two servings.
Tips:
  • Change up the flavor by using different fruits.
  • Cereal can be used in place of granola. I use Multi-Grain Cheerios when I run out of granola and the kids love it.
  • To make this dairy free or vegan friendly substitute the yogurt for coconut or almond yogurt and the protein powder for dairy free/vegan protein powder like pea protein.
  • To make this gluten free use a gluten free granola or cereal.

I make the kids mixed berry Greek yogurt parfaits every other week or so during the school year. We found that it is best to not put the granola on the yogurt parfait until they are ready to eat or else it gets very soggy. I also don’t make the parfait layered because they like to mix it up anyway.

To meal prep:
  1. In a bowl add Greek yogurt and protein powder.
  2. Stir until smooth. If lumpy add a bit more Greek yogurt.
  3. In a three compartment container, add 1/2 cup Greek yogurt mixture to the largest compartment.
  4. Then top the yogurt mixture with 1/2 cup frozen berries.
  5. In the medium compartment add a cupcake liner then add 1/4 cup of granola.
